Sibberi sets off for an early birch water harvest

Spring has come early for Organic Birch Water brand Sibberi which has headed to Latvia, to look after its 2015 harvest in the wild forests of Riga.

The window for harvesting birch water is unpredictable and is only possible for two weeks a year – so the company must tap the trees at the right time to stock up for the next 12 months. The season is normally between winter and spring, when the sap starts rising as the temperature reaches a certain level.

Although Sibberi has little control over the product as its taste and composition varies naturally – it is simply pure birch water – important factors when collecting the sap include the type of tree; when you tap (at the beginning or the end of the season); how high the hole is; how deep the hole is; and the soil composition.

“Because spring is early this year, the last days have been a bit manic for us arranging everything for the harvest in Riga from our offices in London,” says Clara Vaisse co-founder at Sibberi. “We are flying this Saturday to the forest in Latvia and are really excited to put in action what we have been planning the past few months. This time of the year is absolutely critical for us as this is our chance to collect the sap we need for the next 12 months.”
